LEMON GARLIC PASTA

Ingredients

Serves 4

  • 8 oz Spaghetti or any pasta of choice
  • 3 tbsp Ghee (from JustGhee)
  • 1/4 cup Extra Virgin Olive Oil (can be substituted for any variety of JustGhee’s Freshly Handcrafted Ghee for more flavor and richness)
  • 6 cloves Garlic (½ sliced and ½ minced)
  • 1 tsp Chili Flakes
  • 2 tbsp Lemon Juice (or more if preferred)
  • 1/4 cup water from cooking pasta
  • 1/2 bunch Chives (finely chopped)
  • Salt and Pepper to taste
  • 1/3 cup freshly shaved Parmesan cheese

Instructions

  1. Cook pasta as directed in package.
  2. Drain pasta and set aside. NOTE: Reserve ¼ pasta water before draining.
  3. Put extra virgin olive oil in a pan on low heat.
  4. Add garlic. Stir and wait for garlic to change color, then add chili flakes and ½ of the chives. Stir and turn off.
  5. Add cooked pasta and pasta water in back and toss to combine with ingredients in pan.
  6. Add Ghee, then lemon and stir. Ensure pasta is well coated. Add more Ghee if needed.
  7. Plate the pasta
  8. Top with remaining chives, parmesan, salt and pepper and additional chili flakes if needed.
  9. Enjoy!
